Hey all, I've had some requests from friends to post some recipes! I do love to cook. This is one of our regulars!
Grilled Salmon with a Brown Sugar Glaze, Wild Rice, and Green Beans.
Recipe:
Salmon: Fresh Salmon from your grocery store of choice (1 lb will feed 2 adults a toddler)
Jessica's yummy Brown Sugar Glaze: Mix 2 Tbsp of Brown Sugar
3 Tbsp Olive Oil
1 Tbsp Pure Maple Syrup
1 garlic clove (minced)
1 Tbsp Soy Sauce
Pour over Salmon, and marinate for at least 10-15 minutes
Grill outside if possible, if not good old George Foreman
gets the job done! Grill on scaly side for 3 minutes til it pulls off easy, then grill on each side for 4-6 minutes.
Wild Rice: I cheat on this one...Uncle Ben's..it's sooo tasty! (follow box directions)
Green Beans: Fresh Green Beans, clean and cut off ends
put in large frying pan with the following:
1 Tbsp REAL butter
2 Tbsp Extra Virgin Olive Oil
Sprinkle with Salt
When almost done....sprinkle with sugar. ( cook in pan until beans are as soft as you like. I usually cook them for about 15-20 minutes on Medium heat)
This meal is SOO tasty and healthy, even my 18 month old LOVES it!
